<h2>Orange Asparagus Salad Ingredients</h2>
<ul>
<li>Orange – 1 medium sized orange, peeled and then sectioned.</li>
<li>Orange juice – 2 tablespoons, preferably freshly squeezed</li>
<li>Asparagus – 8 ounces</li>
<li>Mustard – ½ teaspoon of mild mustard like Dijon or honey mustard.</li>
<li>Olive oil – 2 teaspoons</li>
<li>Pepper – ¼ teaspoon of freshly ground black pepper.</li>
<li>Salt – 1/8 teaspoon</li>
</ul>
<p><strong>Method</strong></p>
<ol>
<li>Wash the asparagus under running water and snap off their bases as they are very fibrous and inedible. If you want to, you can also scrape off the scales. Cut the asparagus into 2-inch-long pieces.</li>
<li>Heat a little water in a small saucepan and when the water boils, drop in the asparagus. Let it cook for about a minute and then drain it well. Plunge the cooked asparagus into a pan of ice cold water immediately. This will stop the asparagus from cooking any further and will allow it to remain tender but crisp. Let it remain in the water for a minute or two and then drain the excess water. Place them on paper towels and pat them dry.</li>
<li>Add the orange juice, mustard, olive oil, pepper and salt to a small bowl and whisk it thoroughly until the dressing is completely emulsified and smooth.  Add the asparagus the cut orange to the dressing and toss it so that the vegetable and fruit are completely coated.</li>
<li>Place equal quantities of the salad onto two places or bowls. You can serve it immediatekly or allow it to chill in the refrigerator for 4 to 6 hours.</li>

<h2>Apple Salad Ingredients:</h2>
<p>3 ounce long grained rice and wild rice mix<br />
½ medium apple cider, rinsed, cored and sliced<br />
¼ cup seedless grapes, halved<br />
1 tablespoon snipped cilantro<br />
½ tablespoon cider vinegar<br />
1/8 cup apple juice or orange juice<br />
A dash of freshly ground black pepper<br />
1 tablespoon golden raisins<br />
½ tablespoon olive oil, preferably extra virgin<br />
1 tablespoon toasted pecans, optional</p>
<p><strong>Method:</strong></p>
<ol>
<li>Cook the rice mix according to the directions mentioned on the package. If butter is mentioned in the cooking procedure, skip it.</li>
<li>Toss apple slices along with cider vinegar and apple juice or orange juice in a large bowl. Stir in olive oil, snipped cilantro, chopped grapes, raisins and freshly ground black pepper.</li>
<li>Add the cooked rice and cover the bowl. Place the covered bowl in the refrigerator to chill for 4 to 14 hours. Remove the bowl from the refrigerator just before serving and garnish with toasted pecans, if desired. This recipe makes 2 servings.</li>
